Lemon Butter Cake

Lemon Butter Cake – S


Set oven to 350 degrees and spray a 9 x 9 baking pan

Cream together:

  • 1/2 cup butter, softened
  • 4 ounces cream cheese, softened
  • ¾ – 1 cup Truvia
  • 5 Eggs

Add and stir well:

  • zest from 1 lemon
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

In another bowl mix:

  • 1 1/2 cups almond flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Add dry ingredient to wet ingredients and stir well. Pour into prepared pan and bake 45 minutes or until toothpick comes out clean. (Top is dark due to dairy in the cake and cake is dense.)  Cool on rack.

Cream Cheese Frosting

  • 8 ounces cream cheese, softened
  • 2 Tablespoons lemon juice (adjust for spreading consistency)
  • 1/2 cup powdered Truvia

Frost cooled cake
