Ann’s THM Pumpkin Muffins – S

apple muffin

350 degrees

In mixing bowl:

  • 3 cups almond flour
  • ½ tsp salt
  • ½ tsp baking powder
  • ½ tsp nutmeg
  • 1 tsp cinnamon
  • 1/3 cup sweet blend or truvia
  • ¼ cup chopped walnuts or pecans

In another bowl mix:

  • 2 large eggs, beaten
  • 1 ½ cups pumpkin
  • 1 Tab vanilla

Combine wet into dry, put papers into muffin tin

Scoop dough into papers and smooth tops of each

Bake 35 – 40 minutes

Makes 12 – 15 muffins

Frost after cooled

  • 4 oz cream cheese
  • 3 T soft butter
  • 1 T truvia, powdered

 

Refrigerate – they hold together better and are not crumbly
