Lasagna

LASAGNA S

Preheat oven to 400 degrees

Lasagna
1 onion, diced
1 pound ground turkey, or hamburger
*1 15oz can diced tomatoes
3 tbsp tomato paste

*or equal amount of sugar free pasta sauce instead of the can tomatoes and tomato paste
3 tsp Italian spice blend
salt and pepper
2 cloves garlic, crushed
1 pound of zucchini and/or yellow squash, cut into rounds
10 ozs. soft goat cheese
1 cup Greek yogurt
½ bag frozen broccoli, thawed and chopped
1 egg

Salt & pepper

 

2 C shredded mozzarella cheese

Directions:
Heat 1 tablespoon oil and add the diced onions. Saute until softened. Add the ground meat and cook through till done. Drain if necessary. Add canned tomatoes and tomato paste (or pasta sauce), spices, salt, pepper, and garlic. Continue to cook all ingredients until thick and cooked through.
In a medium bowl, combine goat cheese, yogurt, broccoli pieces, S & P and egg. Mix well.

Lightly grease the bottom of a 13 x 9  baking dish. Place a layer of zucchini rounds evenly across the bottom. Layer meat and cheese. Repeat. Bake for 45 min – 1 hour.  Ten minutes before it is done, top with mozzarella and finish baking.
